What is AI Menu Engineering?

Also known as: menu optimisation, menu analytics, menu mix analysis

Menu engineering is the practice of analysing each dish for popularity and profit to decide what to keep, reprice, move or drop. AI automates the analysis and adds forecasting and testing on top of the traditional "stars, plough horses, puzzles and dogs" grid.

The system links recipe costs, supplier prices and POS sales to calculate the margin of every item. It can spot items that are often bought together, model the effect of a price change, and suggest where to place dishes on a printed or digital menu so high-margin ones get attention.

Restaurants, cafes and QSR operators use it to respond to food cost rises, test combos and specials, and tailor digital menu boards and kiosks by time of day. Multi-site groups can compare menu performance across venues.

Results depend on accurate recipe costing and clean sales data. A dish with a low margin may still draw customers who buy drinks, so look at the whole order. Test changes one at a time and compare results before rolling out widely. Check that price changes follow the Australian Consumer Law and are clearly displayed.

With food and labour costs squeezing margins, small menu changes can add meaningful profit. Review the report with your chef or head of operations, since they will know which dishes matter for reasons the numbers do not show.
