AI for Retail & Hospitality

What is AI Pilot / Proof of Concept?

Also known as: AI proof of concept, AI trial, AI POC

An AI pilot, also called a proof of concept (POC), is a limited trial of an AI tool on one problem, in one location or team, for a set period. Its purpose is to learn whether the tool works for your business before committing fully.

A good pilot has a clear problem statement, success measures agreed in advance, a defined timeframe such as four to twelve weeks, an owner, a limited data scope and an exit option. Results are compared with a baseline, and feedback is gathered from staff and customers.

Retail and hospitality businesses often pilot in a single store or venue, on a single use case such as stock forecasting, FAQ answering or booking handling. Involve the people who will use it and set rules about data, human review and when to stop.

Pitfalls include a pilot with vague goals, using perfect test conditions that do not reflect a busy Saturday, forgetting privacy and security checks, and failing to plan what happens after. Many pilots never scale because nobody owns the next step. Agree before you start what a good result looks like and who decides whether to expand.

It matters because a small, controlled trial limits cost and risk, builds staff confidence and produces evidence for a decision. RetailCare's AI agent work typically starts this way.
